A favorite of my husband Peter’s, this baked cod with spinach and lemon potatoes could be excellent to rustle up for the weekend.
Elements:
For the Lemon Potatoes:
600g new potatoes, thickly sliced
2 onions, finely chopped
2 cloves garlic, thinly sliced
handful of oregano, recent or dried
100 ml further virgin olive oil
juice and zest of two lemons
sea salt and freshly floor black pepper
For the cod:
2 cod fillets (200g every)
2 tbsps further Virgin olive oil
30g unsalted butter
Sea salt and freshly floor black pepper
For the Sauce:
1 small onion
2 cloves of garlic
125ml fish inventory
125 ml double cream
5-6 mussels
Spinach:
50g recent spinach
Garnish:
2 small shallots, thinly chopped length-ways.
2 tbsp Olive oil
Technique:
Preheat the oven to 200°C/gasoline mark 6. Place the potatoes in a shallow roasting tray and unfold the onion, garlic and oregano over them. Pour over the olive oil, lemon juice and zest. Add sufficient water, pouring into the facet of the tray, to only cowl the components. Season with sea salt and freshly floor pepper.
Bake for 45 minutes. Then flip the potatoes over and bake for an additional 45 minutes, or till the potatoes are absolutely cooked.
Fry the onions in olive oil and butter till golden for five minutes in a medium heavy primarily based frying pan. Add the garlic and fry for an additional 1 minute.
Then fry the cod, pores and skin facet down for two minutes. Flip over, season properly and add the mussels, cooking for two minutes.

In one other small pan, fry the thinly sliced shallots in extremely popular oil. Put aside for the garnish.
Then, onto a plate, prepare the potatoes right into a circle then place the spinach over them creating layers and at last the cod on the highest.
Rigorously pour the sauce across the cod stack.
Place the onions on the highest making a shallot nest.
